As fall winds down, it’s time to start thinking about our winter gardens. Did you know you can also grow veggies indoors so your families can enjoy fresh food during the long Missouri winter? Three of my favorite indoor “gardens” include microgreens, sprouts, and herbs. These methods are cheap and easy to set up, and the produce adds color and flavor to winter cooking


Microgreens are baby veggies, packed full of vitamins and nutrients. To start a microgreen garden, choose seeds from your favorite vegetable varieties. (PRO tip: choose speedy growers like radish and cabbage. I recommend spicy red daikon radish, green and red cabbage, pea and celery).

  • Scatter seeds in a large tray filled with about 2 inches of soil.
  • Use a spray bottle to water the seeds.
  • Store in a warm, sunny place like a windowsill, and water everyday using a spray bottle.
  • Enjoy ready to cut and eat microgreens in about 1 week. Toss them into your favorite winter squash salads, garnish tasty soups, or mix into your favorite stir-fry’s!


Sprouts are just as easy to grow, don’t require any soil, and add a burst of vitamins and nutrients to your diet.

  • Add 1 cup of beans or veggie seeds (I recommend broccoli, radish, beans, and lentils) into a glass jar.
  • Soak the seeds overnight in cool water.
  • In the morning, drain the water, rinse the seeds and set aside.
  • Rinse, drain, and repeat two times per day for up to one week until you have 2-4 inch baby sprouts! Add to your favorite sandwiches, salads and stir-fry’s for an extra protein and nutrient kick!


Herbs are also a great way to add flavor to any dish, and growing herbs indoors is so easy! Choose herbs like basil, parsley, cilantro, thyme, oregano, mint or chives. You can buy or make little pots with drainage holes and string them up around your window or set them on a window sill. Water every 1-3 days, or when the soil looks dry. Enjoy delicious herbs in 1-3 weeks!
